Vegan grilled portobello burger

This vegan portobello burger is a perfect plant-based barbecue staple – who needs meat when you can have portobello instead?

INGREDIENTS

  • 2 Portobello mushrooms (remove stems)
  • 2 tablespoons + (a little more for serving) bedda Mayo
  • 2 bedda slices Gouda Style
  • 2 burger buns
  • lettuce
  • sliced red onions
  • sliced tomatoes
  • 1/4 tsp garlic powder
  • 1/4 tsp chili powder
  • 1/2 tsp paprika powder
  • BBQ sauce or ketchup
  • Spices salt, pepper

INSTRUCTIONS

Spread the portobello mushrooms with bedda mayo and sprinkle with paprika, chili powder, garlic powder, salt and pepper.

Then place on a grill with the stem side down and sear for 2-3 minutes. Then turn over and put bedda Slices on top. Sauté for another 2-3 minutes until the mushrooms are cooked through.

Cut the burger buns in half and place them on the grill as well. This will keep the buns warm and toasty.

To prepare, spread buns generously with bedda mayo and BBQ sauce. Then top with lettuce, tomatoes, red onions and the grilled portobello.
