Vegan summer rolls with sesame mayo

INGREDIENTS
Ingredients for vegan summer rolls
- 12 rice paper
- vegetables (red cabbage, carrots, cucumber, bell bell pepper, asparagus)
- cooked rice noodles
- fried tofu
- chili
- fresh mint or Thai basil
- sprouts
- sesame
Ingredients for vegan sesame mayo
- 200 g bedda Mayo
- 2 tbsp tahini
- 1,5 tsp sesame oil
- 2 tsp agave syrup
- 2 tsp. soy sauce
- 3 cloves of garlic
- juice of one lime
INSTRUCTIONS

Prepare the vegetables. Thinly slice the red cabbage, cut the cucumber, carrots and peppers into fine sticks, chop the chili and cut the asparagus in half lengthwise.

Mix the sesame mayo ingredients in a bowl.

Fill a large bowl with warm water. Briefly dip a rice paper in the water to soften it. Then place on a cutting board or plate.

Place ingredients on the bottom half of the rice paper according to taste. Add a little of the sesame mayo. Fold the sides of the rice paper inward and then roll up the rice paper from the bottom. Repeat until all ingredients are used.

Serve the summer rolls with the remaining sesame mayo.
