INGREDIENTS
Ingredients for 4 bases:
- 60 g walnuts
- 4 Medjool dates
- 1/4 tsp cinnamon
- 1/2 tbsp melted coconut oil
Ingredients for 4 cheesecake layers:
- 1 ripe banana
- 300 g bedda Creamy Spread Plain
- 15 g vanilla sugar (or more according to taste)
- 1 tsp lemon juice
- 1/4 tsp ginger powder
Ingredients for 4 caramelized apple layers:
- 15 g vegan butter
- 1 large apple, diced
- 2 tsp lemon juice
- 25 g brown sugar
- 1/4 tsp cinnamon
INSTRUCTIONS
Place walnuts, dates, cinnamon and coconut oil in a small blender. Blend until the mixture forms a sticky ball. Then press the mix into the bottom of 4 small glasses.
Mash the banana with a fork in a bowl. Add bedda Creamy Spread Plain, sugar, lemon juice and ginger powder and mix everything well. Taste the sweetness according to preference. Then divide the cream among the 4 glasses and spread on the bottom layer.
Place the jars in a refrigerator for at least one hour.
Melt vegan butter in a small pan over medium heat. Add apples and simmer them in the vegan butter for 15-20 minutes until they are soft. Stir occasionally. Then add lemon juice, sugar and cinnamon and simmer for another minute until sugar is melted. Then remove to the side and let cool.
After apples have cooled, top each glass with apple chunks and serve directly or return to refrigerator.
