Vegan Baked French Onion Soup

INGREDIENTS
For 4 persons
- 600 g vegetable onions
- 2 tbsp olive oil
- 1 tsp sugar
- 200 g bedda Grated Gouda Style
- 2 tbsp vegetable broth
- 1/2 l vegan white wine (or alternatively more vegetable stock)
- 2 slices of white bread
- 1 tsp dried thyme
- spices salt, pepper, paprika edelsüß
INSTRUCTIONS

Preheat the oven grill (E-herd: 200 °C/ convection oven: 175 °C).

Peel and halve the onions, cut into strips and sauté in oil.

Sprinkle with sugar and stir until briefly caramelized. Season with salt and pepper.

Deglaze onions with about 1⁄2 liter water and wine, bring to a boil. Add broth and thyme. Simmer for about 10 minutes.

Meanwhile, toast bread in toaster and then roughly dice.

Season soup with salt, bell pepper and paprika, pour into four ovenproof soup bowls, place on a baking sheet, spread bread cubes on top of soup, bedda Grated Gouda Style and bake under hot broiler for 3-4 minutes.
