Asparagus with roasted potatoes and vegan Hollandaise

INGREDIENTS
For 4 persons
- 1/2 glass bedda Hollandaise
- 10 young potatoes
- 10 spears of green asparagus
- 1 tablespoon olive oil
- 1/2 tsp garlic powder
- Spices salt, pepper
- For garnish: Fresh strawberries
INSTRUCTIONS

Wash potatoes, cut into halves and place on a baking sheet. Drizzle with oil and sprinkle with garlic powder, salt and pepper. Mix the potatoes lightly so that all pieces are evenly covered.

Bake for 30-35 minutes at 200 °C until the potatoes get a light browning. Turn the potatoes and add the asparagus to the baking tray. Mix everything lightly so that the asparagus is evenly covered with oil. Bake for another 10-15 minutes until the asparagus and potatoes are well browned and crispy.

Meanwhile, heat the bedda Hollandaise in a small saucepan, stirring occasionally.

Serve the roasted asparagus and potatoes with the bedda Hollandaise and fresh strawberries.
